When you’re trying to think of a good potluck or party dish that’s easy on your pocketbook, consider goulash. It’s a classic, goes together in a snap, and has a warm, welcoming taste. What’s not to like?
This recipe calls for ground beef, but you can use ground chicken or turkey and get very similar results. You can also swap out the cheese for anything you like “melty” for the topping.
Effortless Goulash
Ingredients
- 1 Tbs extra virgin olive oil
- 1 cup white onion, (diced and chopped)
- 1 yellow bell pepper, diced
- 2 lbs 80-20 ground beef
- 3 Tbs freshly minced garlic
- 1 clove black garlic, (minced)
- 16 oz. tomato or spaghetti sauce
- 16 oz. petite diced tomatoes, (Italian style)
- 3 cups beef broth (or au jus)
- 3 tsp Worchestershire Sauce
- 2 tsp Kosher salt
- 2 tsp Italian seasoning
- 1 tsp onion powder
- 1 tsp sugar
- 2 cups uncooked macaroni
- 1 or more cups shredded cheddar cheese
- Dollup sour cream
Instructions
- Brown the ground beef in a large pot.
- Drain off the fat and set the meat aside temporarily.
- Put the olive oil, onions, pepper, and garlic into the pot, sauteing them until aromatic.
- Add all the remaining ingredients except for the cheese.
- Bring everything to a low rolling boil, then turn down the heat.
- Simmer until the noodles are fork-tender (approximately 20 minutes)
- Serve with grated cheese and a dollop of sour cream on top.
