Silky and delicious panna cotta can be made easily in the comfort of your own home.
Panna Cotta with Fresh Berry Medley
Ingredients
- 1 whole fresh vanilla bean
- 32 oz heavy cream
- ½ cup + 2 Tbsp white granulated sugar
- 2.5 tsp unflavored powdered gelatin
- 3 Tbsp water
- 4 oz strawberries (washed and cut in quarters)
- 4 oz blueberries (washed and drained)
- 2 oz raspberries (washed and drained)
- 2 oz blackberries (washed and drained)
- Zest of 1 lemon
- Juice of ¼ lemon
- 3 mint leaves (finely sliced)
- Tiny sprinkle of kosher salt
Instructions
- Cut the vanilla bean in half length-wise and use a knife to scrape out the seeds from the inside of the bean.
- Combine vanilla bean pod and the vanilla bean seeds you just scraped out with ½ cup of the white granulated sugar and bring to a simmer on the stove.
- When the liquid reaches a simmer, turn off the heat and cover with a lid for 30 minutes to allow vanilla flavor to infuse into the panna cotta.
- Sprinkle the powdered gelatin over the 3 Tbsp water and allow gelatin to absorb liquid for 5-7 minutes.
- Bring cream mixture back to a simmer, and remove the vanilla bean pod.
- Remove mixture from heat and whisk in the gelatin, stirring to completely combine.
- Divide the mixture into 8 ramekins.
- Allow to rest at room temperature for one hour.
- Cover the ramekins with plastic wrap and carefully place them in the fridge for at least four hours to allow the panna cotta to set.
- When ready to serve, mix the berries with the remaining 2 Tbsp white granulated sugar, lemon zest, lemon juice, sliced mint, and a few grains of kosher salt.
- Allow berries to sit for 15 minutes and release some of their juices before stirring again and serving.
- Serve panna cotta with berries and their juices.
