
Portobello Quesadillas
Ingredients
- 3 ozs. bacon
- 8 cups Portobello mushrooms (sliced)
- 1 cup cheddar cheese
- 8 flour tortillas
- Cooking spray
- Sour cream
Instructions
- Cook bacon in a skillet until crisp, remove and set on paper towels to drain.
- Saute mushroom in the same pan the bacon was cooked in, remove and wipe pan clean.
- Combine bacon and mushrooms together and toss.
- Sprinkle some cheese on 4 tortillas followed by mushroom mixture.
- Sprinkle more cheese on top of mushrooms and top with 4 remaining tortillas.
- Spray with cooking spray and heat in skillet for 2 minutes each side.
- Remove and cut into wedges.
- Serve with sour cream and salsa recipe to follow.
