- I went through a period where I was making breakfast smoothies almost every morning. This sweet version relies heavily on ripe bananas, fresh carrots, cinnamon, peanuts, some whole milk, and a large slug of maple syrup.
- In a way, the reliance on the overly ripe bananas reminds me a lot of banana bread. And the carrots and peanuts pair wonderfully with the sweet and ripe banana flavor. It’s also a great use of ripe bananas that is different from your traditional banana bread!
- The recipe below makes two very large breakfast smoothies.

Peanut, Banana, & Carrot Breakfast Smoothie
Ingredients
- 1 cup whole milk
- 1 cup ice
- ¼ cup maple syrup
- 2 very ripe bananas, peeled
- 2 medium-sized carrots, peeled and roughly chopped
- ½ cup peanuts
- ¼ cup flax seed (optional)
- 1.5 tsp ground cinnamon
Instructions
- In a large blender, add the whole milk, followed by the ice and maple syrup.
- Add the two ripe bananas, the carrots, the peanuts, and the cinnamon.
- Add the flax seed, if desired.
- Blend on high speed until completely smooth in consistency.
- Taste, and adjust quantity of maple syrup as desired.
- Serve cold.
