Sweet and Sour Salad

Ingredients

  • 6 oz. pasta noodles, cooked and drained
  • 2 stalks celery, diced
  • 2 cucumbers, peeled, seeded and diced
  • 2 Tbsp. fresh parsley, minced
  • 2 carrots, peeled and julienne sliced
  • 3 - 4 boneless chicken breasts, cooked and diced
  • 1 and 1/2 cups cooked ham, diced
  • 1/3 cup soy sauce
  • 1/3 cup sesame oil
  • 1/2 cup sugar
  • 1/2 cup vinegar
  • 1 clove garlic, minced
  • 1 Tbsp. green onions, chopped
  • 1 Tbsp. crushed red pepper
  • Salt to taste

Instructions 

  • Combine first 7 ingredients in a large bowl and toss
  • Combine last 8 ingredients in a cruet and shake well; pour over salad and toss
  • Serve immediately or you may chill before serving
