While the guanciale here might be unique to some, this cured pork jowl product is sliced thin, and served like prosciutto. In this recipe, the thinly-sliced guanciale is served on toothpick skewers with some seasoned cherry tomatoes and mozzarella balls. It’s absolutely worth trying out for your next dinner party or large family gathering.
The following recipe provides 24 appetizer-sized skewers.
Guanciale, Seasoned Cherry Tomato, and Mozzarella Skewers
Ingredients
- 24 cherry tomatoes (cut in half)
- ¼ tsp Kosher salt
- A few grinds of freshly-ground black pepper
- A small pinch of dried oregano
- 2 tsp extra virgin olive oil
- 24 cocktail skewers or toothpicks
- 24 mozzarella balls (drained from their liquid)
- 24 very thin slices of guanciale (roughly 4 or 5 oz)
Instructions
- Combine the halved cherry tomatoes in a small mixing bowl with the Kosher salt.
- Allow the cherry tomatoes to sit for ten minutes, and then drain the excess liquid from the bowl.
- Add the freshly-ground black pepper to the bowl with the drained tomatoes, along with the dried oregano and the extra virgin olive oil.
- Toss the tomatoes together to mix well.
- When you are ready to assemble your appetizer skewers and serve, gather your toothpicks and a serving platter.
- Assemble the skewers with a half of cherry tomato on the bottom of each skewer, followed by a mozzarella ball, followed by a piece of thinly-sliced guanciale, and finished off at the top with the other half of a cherry tomato.
- Arrange the 24 assembled skewers on a serving platter, and enjoy!
