When we say mountain, we mean MOUNTAIN. You will need a couple of friends to polish off this recipe. You can make it as a party snack, but it’s also filling enough for lunch. The seasonings in the Mountain of Fries have a Mexican flair, somewhat like nacho fries. Fabulous meat and cheese tucked into a tortilla. Who knew?
Mountain of Fries
Ingredients
- 2 lbs Flank steak
- ½ cup freshly squeezed orange juice
- ¼ cup lime juice (fresh if possible)
- 2 tsp raw chopped garlic
- ¼ Virgin Olive Oil
- ¾ tsp salt
- ¼ tsp ground pepper
- 1 Jalapeno pepper (seeded and chopped)
- ¼ cup chopped olives
- ½ cup banana pepper rings
- 1 tsp Taco seasoning (in a pinch, chili seasoning)
- ¼ cup cilantro leaves (chopped)
INGREDIENTS: TOPPING
- Previously prepared steak
- 2 lbs frozen thin french fries
- 1 cup shredded Mexican-blend cheese (cheddar also works)
- ¾ c Pico De Gallo (go crazy. Try peach or mango)
- ¾ c guacamole
- ½ c sour cream
- Lime slices
- Mini taco shells or tortilla chips
Instructions
- Marinate the steak in a food storage bag, mixing it with juice, garlic, oil, and spices.
- Leave in the refrigerator for 5 hours, turning the bag every hour
- Preheat the grill to 400F
- Remove the steak from the marinade
- Sear it on the grill for 5 minutes on each side. This produces medium-rare meat. Take care. Do not overcook the steak.
- Move the steak into an aluminum foil wrap
- Rest it for 5 minutes
- Thinly slice the meat, slicing against the grain.
- Put it aside. This is the foundation for your mountain.
- Preheat the oven to 400F.
- Coat a cookie pan with spray oil.
- Spread the french fries evenly over the pan. Use the directions provided for the baking time.
- Warm the steak briefly in the microwave.
- Place the steak in a serving bowl first
- Mound the fries and cheese on next
- Top with pico, guacamole, and sour cream
- Garnish with the limes
- Eat with taco or tortilla shells
