There are always times when snacks and/or appetizers are welcome. This recipe brings potatoes, cheese, and bacon together. What could go wrong? The flavor is lovely but not over the top. It won’t linger so much that it spoils the other flavor profiles in your meal later.
For best results, use a mandolin to cut your potatoes. That way, they come out and cook evenly.
Potato Nibblers
Ingredients
- 3 peeled Yukon gold potatoes
- 2 tbsp extra virgin olive oil
- Fresh ground salt and pepper (to taste)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 ½ cups sharp cheddar cheese, (shredded)
- 6 slices crisp, smoky bacon, crumbled
- Sour cream & green onions for serving
Instructions
- Set your oven at 400F
- Slice the potatoes into ½ pieces
- Put the potatoes into a large mixing bowl.
- Cover them evenly in oil, followed by salt, pepper, garlic powder, and onion powder.
- When everything is mixed together thoroughly, lay out the potatoes in a SINGLE layer on a baking dish (use parchment paper to save on cleanup)
- Cook for about 35 minutes, turning after 15 minutes, until golden and fork tender.
- Top the potatoes with cheese and bacon
- Broil until the cheese melts
- Serve with sour cream and green onions
