Soy protein is really easy to work with—you basically soak it or boil it in hot water, at which point it can be drained and shaped into a patty or pan-fried like ground beef. In the recipe below, a small quantity of textured soy protein is mixed with spices and herbs to create an amazing meatless breakfast patty, which is served as part of a cheesy breakfast sandwich.
The following recipe makes 2 sandwiches.

Soy Protein, Egg, and Cheese Breakfast Sandwiches
Ingredients
- ¼ cup dried textured soy protein
- ¼ white onion (medium dice)
- 1 tsp Kosher salt
- 2 Tbsp chives (finely sliced)
- A few grinds of fresh black pepper
- A tiny pinch of ground cumin
- ¼ tsp dried oregano
- ¼ tsp red pepper flakes
- 1 Tbsp all-purpose flour
- 1 tsp corn starch
- ½ Tbsp butter (softened)
- 3 whole eggs
- 2 tsp butter
- 2 Brioche burger bun (or any bread of choice)
- 4 slices American cheese
- 2 Tbsp mayonnaise
Instructions
- Preheat your oven to 400˚F.
- In a small-sized soup pot, combine the textured soy protein, diced onion, and Kosher salt.
- Add one cup of water, or enough to cover, and bring to a simmer.
- Cook on medium heat for ten to fifteen minutes, or until the water has mostly evaporated and been absorbed by the textured soy protein.
- Drain any excess water, and place the cooked textured soy and onions on a cutting board.
- Chop the contents for a minute or two, until they resemble the consistency of ground beef.
- Add the contents to a medium-sized mixing bowl, and combine with the sliced chives, black pepper, ground cumin, dried oregano, red pepper flakes, all-purpose flour, corn starch, and one whole egg.
- Form the mixture into two burger-sized patties, and pan-fry them on both sides with a small teaspoon or two of sunflower seed oil until lightly golden-brown.
- For the eggs, add the butter to a sauté pan, and cook the two eggs sunny-side up.
- For the buns, add the cheese on top, and toast the buns in the oven for about five minutes, or until the cheese is melted.
- Remove the buns from the oven, and top with the cooked textured soy protein patty and the cooked egg, along with a bit of mayonnaise.

Sometimes I’ll add cooked potatoes in with the cooked soy protein, especially for a breakfast-oriented patty.
