I worked at a bar in Washington D.C. for long enough to see a lifetime’s worth of bizarre drinks and cocktail combinations. The cement mixer shooter, which combines Baileys Irish Cream with lime juice, is one of those drinks. While the ingredients are incredibly simple, the lime juice effectively curdles the Irish Cream in your mouth, creating a unique, “cement-like” curdled texture.
I never really understood why this shot was so popular. Unintuitively, I think part of the appeal is that the curdled texture is so unappealing to most people.
The following recipe makes 1 shooter.
Cement Mixer
Ingredients
- 1.5 oz Irish Cream (like Baileys)
- ½ oz freshly-squeezed lime juice
Instructions
- Pour the Irish Cream into a shooter glass.
- Add the lime juice.
- Serve, and encourage whoever is drinking it to swirl the mixture around in their mouth before swallowing.
