I am so excited for the upcoming summer tomato season, I can hardly contain
myself. For this bright and refreshing tomato-forward cocktail, a ripe heirloom
tomato is blended and then strained through a fine mesh strainer to create a tomato
base. Chilled gin, cucumbers, and lime juice are added to create the final cocktail.
Heirloom Tomato Cocktail
Ingredients
- 1 ripe Heirloom tomato
- 1 oz gin of preference (chilled)
- 2 Tbsp fresh peeled cucumber (small dice)
- Juice of ¼ lime
- A wedge of fresh lime (as garnish)
- A slice of fresh cucumber (as garnish)
Instructions
- Blend the tomato using an immersion blender, and then strain the tomato puree through a fine mesh strainer.
- Chill the tomato liquid in the fridge for one hour.
- Combine the chilled tomato liquid in a shaker with ice, gin, diced cucumber, and lime juice.
- Pour the contents with the ice into a chilled pint glass.
- Garnish with a wedge of fresh lime and a slice of fresh cucumber.
