This dessert recipe is easy to make, healthy, and delicious!
Chia Seed Banana Pudding
Ingredients
- ½ cup chia seeds
- 3 overripe bananas, (mashed into a paste)
- 2 cups coconut milk
- 3 Tbsp maple syrup
- 1 tsp vanilla extract
- ¼ cup toasted coconut flakes, (optional, as garnish)
Instructions
- Combine chia seeds with mashed bananas, coconut milk, maple syrup, and vanilla extract.
- Stir and allow to rest in the fridge for 20 minutes.
- After the mixture has rested for another 20 minutes, stir the contents again and place back in fridge.
- After the mixture has rested for an additional 20 minutes, stir a final time and allow the mixture to set in place in the fridge overnight.
- Serve with toasted coconut flakes, if desired.
