I’ve been looking lately for simple, no-bake dessert recipes that can be easily scaled up or down. In this dessert, homemade whipped cream is mixed with some strawberry and raspberry puree, and served with some fresh berries on top.
The following recipe serves 6 people.
Red Berry Mousse
Ingredients
- 16 oz 1 lb fresh strawberries, hulls removed, plus 6 whole strawberries reserved for garnish
- 2 oz ¼ lb fresh raspberries, plus 6 whole raspberries reserved for garnish
- ¼ cup powdered sugar
- 2 cups heavy whipping cream
- 1 Tbsp white granulated sugar
- A tiny pinch of Kosher salt
Instructions
- In an immersion blender container, puree together the strawberries and raspberries, along with the powdered sugar.
- Strain the contents through a fine mesh strainer, and reserve the liquid in a bowl.
- Whip together the two cups of heavy whipping cream with the Tablespoon of white granulated sugar, and continue to mix until soft peaks form.
- Use a rubber spatula to gently fold a few Tablespoons of the red berry puree into the whipped cream.
- When you are ready to serve, add a spoonful of the berry puree to the bottom of each serving bowl or glass.
- Top with a generous scoop of the red berry mousse.
- Top each serving with a fresh strawberry and fresh raspberry.
- Serve cold.
Notes
You can even assemble the layered desserts an hour or so in advance of serving, just store them covered in the fridge.
