Buffalo, NY, is the home to the chicken wing, which has certainly got a lot of fans. Over time, people thought about how wing flavors could be used in other things. In this case, it’s a burger.
This recipe calls for ground chicken (well… chicken wings, so it follows). Having said that, it’s quite tasty with beef.
You will see Frank’s RedHot Sauce as the “heat” in this recipe. Frank’s has been around since the 1920’s. When the Anchor Bar & Grill in Buffalo used Frank’s on the first set of wings, a tradition was born. Other hot sauces are possible, but it’s just not the same.
Buffalo Blu Burger
Ingredients
SAUCE
- 4 oz unsalted butter
- 4 oz. traditional Frank’s Red Hot Sauce
- ⅔ tsp Worcestershire sauce
- 2 tsp seasoned salt or smoked salt
BURGERS
- 1 ½ lb ground chicken
- ½ tsp salt
- ¼ tsp pepper
- ¼ tsp smoked paprika
- ¼ cup blue cheese crumbles
- 4 Brioche buns
- Shredded lettuce (optional)
- Sliced tomato (optional)
- Sliced or minced onion (optional)
Instructions
- Melt the butter, adding the hot sauce, Worcestershire, and salt. Set aside.
- Mix the ground chicken with a little salt and pepper.
- Divide the meat into four equal portions.
- Take each portion and form them into somewhat loose burgers. Pu a thumbprint at the center. This helps your burger cook uniformly to the edges.
- Set grill to 400F.
- Cook the meat for 5 minutes on each side (you want an internal temperature of 165F).
- Toast your buns.
- Place the chicken burger in the middle of the bun. A 1-2 tsp of the buttery hot sauce on top (spread it).
- Evenly coat the burger with blue cheese crumbles.
- Add any other toppings desired and enjoy.
