Did someone say steak? Steak and butter!! If there were ever two ingredients meant for each other, it’s steak and butter.
Chefs will tell you there are some tricks to getting that perfect steak, and butter is one of them. Some of the advantages of using butter on steak are:
Provides a great texture, often adding to the yummy, coveted crust
Makes a glossier finish for the presentation
Enhances the richness of the steak and adds a note of flavor
Creates a sauce you can use in serving.
Steak in a Butter Sea
Ingredients
- 1 lb NY Strip steak (thick cut)
- 3 tsp coarse salt
- 2 tsp fresh pepper
- 2 cloves minced garlic
- 1 tsp smoky paprika
- ½ stick butter at room temperature
- 1 tsp fresh parsley
Instructions
- Dry the steak on all sides using paper towels
- Sprinkle the surface with salt, pepper, and paprika
- Press the garlic onto the surface of the meat
- Melt the butter in an iron skillet (medium-high heat)
- When the butter melts and begins browning, place the steak into the pan
- Sear it for 3 minutes on each side (for medium rare)
- As it sears, use a spoon to continually cover it in a sea of butter
- Let the steak rest for 10 minutes
- Transfer to a serving platter
- Slice against the grain of the steak
- Sprinkle with parsley and serve.
