Put together the sauce by warming all the ingredients until thoroughly mixed.
Set aside.
In a bowl, mix together cornstarch, garlic, onion, salt, and pepper.
Cut the chops into ½-inch thick strips (about 2-3” long each).
Toss the pork strips into the cornstarch blend. Make sure all sides are covered.
Take out your skillet again, put in the sesame oil, and warm over medium heat.
Put a few strips at a time in the pan, taking care not to crowd them.
Sear for 2-3 minutes and move the pork to a plate.
Once all the strips are seared, put them back into the pan with the honey sauce. Simmer for 5 minutes to thicken.
Toss the pork with sesame seeds and green onion before serving over your chosen starch.
