Cheesy Corn and Shrimp Chowder
Ingredients

Tbsp.
butter
1
onion,
(chopped)
One half
cup
celery,
(chopped)
2
carrots,
(peeled and chopped)
1
tsp.
dry mustard
2
cups
chicken broth
1
tsp.
thyme
1
16-oz.
frozen package sweet corn
1
cup
Half-and-Half or light cream
1
and one half pounds medium shrimp, shelled, deveined and cut into bite sized pieces
1
cup
Fontina cheese,
(grated)
Instructions
Melt butter in a saucepan and saute onion, celery and carrots for about 10 minutes, add dry mustard, broth and thyme, and simmer for 10 minutes
Add corn, Half-and-Half and shrimp and simmer for 10 minutes until shrimp turns pink
Add cheese and stir until melted and serve
Notes
Use fat-free chicken broth and Half-and-Half
