Balsamic Chicken with Almonds and Red Grapes

Ingredients

  • One quarter cup olive oil
  • 6 - 8 boneless chicken breasts
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1 and one half cups red seedless grapes
  • One quarter cup balsamic vinegar
  • 2 Tbsp. brown sugar
  • One half cup slivered almonds

Instructions 

  • Heat oil in a large skillet
  • Sprinkle chicken with salt and pepper and saute on each side until brown
  • Remove chicken from pan and set aside
  • Add chicken broth, grapes, vinegar, brown sugar and almonds to pan and cook over low heat for about 10 minutes
  • Return chicken to skillet and cook for 5 - 10 more minutes or until chicken is fully cooked

Use fat free chicken broth
