Balsamic Chicken with Almonds and Red Grapes
Ingredients
One quarter cup olive oil
6 - 8 boneless chicken breasts
Salt and pepper to taste
1
cup
chicken broth
1
and one half cups red seedless grapes
One quarter cup balsamic vinegar
2
Tbsp.
brown sugar
One half cup slivered almonds
Instructions
Heat oil in a large skillet
Sprinkle chicken with salt and pepper and saute on each side until brown
Remove chicken from pan and set aside
Add chicken broth, grapes, vinegar, brown sugar and almonds to pan and cook over low heat for about 10 minutes
Return chicken to skillet and cook for 5 - 10 more minutes or until chicken is fully cooked
Notes
Use fat free chicken broth
