Fiesta Bread Pudding
Ingredients
1 and one quarter
cups
water
1 and one third
cups
water
3
cinnamon sticks
5

French bread,
(cubed)
One quarter
cup
sliced almonds
One third
cup
raisins
One quarter
cup
butter
One half
cup
Monterey Jack cheese
Instructions
Combine water, brown sugar and cinnamon sticks in a saucepan and simmer for 15 minutes
Remove cinnamon sticks and discard
Combine bread, almonds, raisins and butter and mix well
Pour sugar mixture over bread mixture and mix
Spray an 8-inch baking pan with cooking spray and place mixture in pan
Chill for 1 hour and remove
Top with Monterey Jack cheese, cover with foil and bake for 25 minutes at 350 degrees
Remove foil and bake an additional 10 minutes
Serve warm
Notes
Use your favorite sugar substitute and low fat cheese
