Fiesta Bread Pudding

Ingredients

  • 1 and one quarter cups water
  • 1 and one third cups water
  • 3 cinnamon sticks
  • 5 cups French bread, (cubed)
  • One quarter cup sliced almonds
  • One third cup raisins
  • One quarter cup butter
  • One half cup Monterey Jack cheese

Instructions 

  • Combine water, brown sugar and cinnamon sticks in a saucepan and simmer for 15 minutes
  • Remove cinnamon sticks and discard
  • Combine bread, almonds, raisins and butter and mix well
  • Pour sugar mixture over bread mixture and mix
  • Spray an 8-inch baking pan with cooking spray and place mixture in pan
  • Chill for 1 hour and remove
  • Top with Monterey Jack cheese, cover with foil and bake for 25 minutes at 350 degrees
  • Remove foil and bake an additional 10 minutes
  • Serve warm

Use your favorite sugar substitute and low fat cheese
