Portobello Quesadillas

Ingredients

  • 3 ozs. bacon
  • 8 cups Portobello mushrooms (sliced)
  • 1 cup cheddar cheese
  • 8 flour tortillas
  • Cooking spray
  • Sour cream

Instructions 

  • Cook bacon in a skillet until crisp, remove and set on paper towels to drain.
  • Saute mushroom in the same pan the bacon was cooked in, remove and wipe pan clean.
  • Combine bacon and mushrooms together and toss.
  • Sprinkle some cheese on 4 tortillas followed by mushroom mixture.
  • Sprinkle more cheese on top of mushrooms and top with 4 remaining tortillas.
  • Spray with cooking spray and heat in skillet for 2 minutes each side.
  • Remove and cut into wedges.
  • Serve with sour cream and salsa recipe to follow.
