As a bartender, I used to not be in love with drinks that required a shaken egg white. At home, with a shaker, these types of drinks are pleasure to make in small quantities. This drink is a simple mix of citrus with reduced apple cider, Applejack brandy, egg whites, and club soda. The recipe below is for one cocktail.
Ingredients
½cup of fresh apple cider, reduced down to 1oz
1.5oz Applejack brandy
½oz simple syrup
¼oz freshly-squeezed lemon juice
½oz freshly-squeezed lime juice
1.5oz club soda
1small slice of fresh apple, as garnis
Instructions
Reduce ½ cup of fresh apple cider down to 1oz on the stove in a small sauce pot.
Chill reduced apple cider down until it is cool.
When the reduced apple cider has chilled, mix it with the Applejack brandy, simple syrup, lemon juice, and lime juice in a dry shaker tin.
Shake vigorously for 60 seconds.
Add ice to the mix, and shake vigorously for another 60 seconds.
Strain the mixture into chilled glasses, topped with a splash of club soda and the fresh apple slice garnish.
Notes
You can omit the reduced apple cider here, if you don’t have it on hand when you want to make the cocktail. It is easier to make these egg-white shaken cocktails one or two at a time.
