Ingredients

  • 1 egg
  • 2 cups biscuit mix
  • 1/3 cup sugar
  • 2/3 cup milk
  • 2 tsp. grated lemon zest
  • 1 and 1/2 cups frozen blueberries, thawed, rinsed and drained
  • 2/3 cup confectioner's sugar
  • 1 Tbsp. fresh lemon juice

Instructions 

  • Combine egg, biscuit mix, sugar, milk and lemon zest and mix well
  • Gently fold in blueberries
  • Pour into a lightly greased 9-inch round pan
  • Bake at 400 degrees for 20 - 25 minutes
  • Combine confectioner's sugar and lemon juice to make glaze
  • Drizzle over cake before serving
