Bread Pudding with Rum Sauce

Ingredients

  • 3 cups white bread, ( cubed)
  • 2 cups milk
  • 1 Tbsp. butter
  • 4 eggs
  • 2/3 cups sugar
  • 1/2 cup raisins
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 2 tsp. vanilla

Rum Sauce:

  • 1 cup milk 2 Tbsp
  • brown sugar 1 Tbsp
  • cornstarch 1 Tbsp
  • dark rum

Instructions 

  • Place bread in an 8 x 8 inch baking dish.
  • Combine milk and butter in a saucepan and cook over lo heat until butter is melted, allow it to cool slightly.
  • Beat eggs and add to milk mixture.
  • Add sugar, raisins, cinnamon, nutmeg and vanilla and pour over bread cubes.
  • Bake for 30 minutes at 325 degrees, pour rum sauce over bread and bake an additional 10 minutes.

Notes

Use light bread, low fat milk and your favorite egg and sugar substitutes.
