Bubbly Dreams

This Champagne cocktail is delicately flavored with Absinthe and Campari, and brightened by some acidity in the form of fresh lemon juice.
The recipe below makes 1 cocktail.

Ingredients

  • 1.5 oz Absinthe
  • 1 oz Campari
  • ½ oz freshly-squeezed lemon juice
  • 2 oz Champagne, or dry sparkling white wine of choice
  • 1 thin wedge of lemon, (as garnish)

Instructions 

  • Combine the Absinthe, Campari, and freshly-squeezed lemon juice in a shaker with ice, and shake for 5 seconds.
  • Strain the liquid into a chilled glass.
  • Top with the Champagne, garnish with the thin wedge of lemon, and serve immediately.

Notes

For lovers of sweeter drinks, consider adding ½ oz of simple syrup to the cocktail when you are combining the ingredients in the shaker.
A drop or two of orange bitters also goes quite nicely here.
