I went through a period where I was making breakfast smoothies almost every morning. This sweet version relies heavily on ripe bananas, fresh carrots, cinnamon, peanuts, some whole milk, and a large slug of maple syrup. In a way, the reliance on the overly ripe bananas reminds me a lot of banana bread. And the carrots and peanuts pair wonderfully with the sweet and ripe banana flavor. It’s also a great use of ripe bananas that is different from your traditional banana bread!The recipe below makes two very large breakfast smoothies.
Ingredients
1 cupwhole milk
1 cupice
¼ cup maple syrup
2 very ripe bananas, peeled
2 medium-sized carrots, peeled and roughly chopped
½ cuppeanuts
¼ cupflax seed (optional)
1.5 tspground cinnamon
Instructions
In a large blender, add the whole milk, followed by the ice and maple syrup.
Add the two ripe bananas, the carrots, the peanuts, and the cinnamon.
Add the flax seed, if desired.
Blend on high speed until completely smooth in consistency.
Taste, and adjust quantity of maple syrup as desired.
Serve cold.
Notes
These are best consumed right away, as the contents tend to separate if allowed to sit for an extended period of time.
