The use of storebought flatbread makes for a quick and delicious appetizer that can be cut into small bite-sized pieces. The flatbread is topped with bacon, blue cheese crumbles, caramelized onions, garlic, and parmesan cheese, baked in the oven, and finished with crème fraiche, fresh chives, and a drizzle of honey. The recipe can easily be scaled up if you are trying to feed a large group.
Ingredients
5slices of thick-cut bacon
2Tbspsalted butter
1 white onion, (cut into 1/8” thick slices)
3cloves of garlic,(roughly chopped)
2Tbspolive oil
1large flatbread,(or 2 smaller flatbreads)
¼cupcrumbled blue cheese
¼cupfreshly-grated parmesan cheese
¼cupcrème fraiche,(as garnish)
2Tbspfresh chives,(finely sliced, as garnish)
1Tbsphoney,(drizzled on at the end as garnish)
Freshly-ground black pepper
Instructions
Preheat oven to 375F.
Cook bacon in a saute pan until cooked through but before it is crispy.
Remove bacon from the heat and allow to drain on paper towels.
Add 2 Tbsp salted butter to the saute pan, along with the sliced white onion.
Cook onions over medium heat for 25-30 minutes, or until lightly caramelized.
*You can add a spoonful or two of hot water to the saute pan as the onions are cooking if they start to take on too much color or start to cook unevenly. This will help to ensure you have a more consistent golden color.
Add garlic and olive oil, and cook for an additional 2 minutes.
Spread the onions, garlic, and oil mixture on the top of the flatbread.
Chop the bacon you cooked earlier into bite-sized pieces.
Add the cooked bacon to the flatbread, topped with the crumbled blue cheese and freshly-grated parmesan cheese.
Bake in the oven at 375F on parchment on a sheet tray or preheated pizza stone for about 15-20 minutes until the flatbread is hot and the parmesan cheese has melted.
*If using a pizza stone, make sure to place some foil on the rack below the stone to catch any oil or drippings that might fall from the flatbread as it cooks.
Remove from the oven, and allow to cool for 3 minutes.
Cut the flatbread into squares, and garnish each slice with a small spoon of crème fraiche, some chives, and a small drizzle of honey.
Finish each slice with a sprinkling of freshly-ground black pepper.
Notes
You can buy fresh flatbread bases at the supermarket, or frozen flatbread will work great here as well. If you are using frozen flatbread or a frozen pizza base, cook according to package instructions.
