Cool Lemon Bars

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 butter, (softened)
  • 4 eggs beaten
  • 2 cups sugar
  • 1/4 cup lemon juice
  • 1/4 cup flour
  • 1 tsp. baking powder
  • Additional powdered sugar

Instructions 

  • Combine flour and powdered sugar; add butter and mix until crumbly
  • Press into a greased 13 x 9 inch pan
  • Bake for 20 minutes at 350 degrees until lightly browned
  • Combine eggs, sugar, and lemon juice
  • Stir in flour and baking powder
  • Pour over cooked crust and bake for 25 - 30 minutes at 350 degrees
  • Allow to cool and dust with powdered sugar and cut into squares
