When you think of pumpkins, fall immediately comes to mind. This pumpkin waffle recipe has everything you’d want for a crisp autumn morning. Warm spices like cinnamon and nutmeg combined with brown sugar, and what’s not to love? Better still, you begin with a box mix (don’t shudder we promise it’s great), so you’ll save time. For those people who prefer pancakes, all is not lost. You can make your mix from scratch (less butter, eggs, and sugar than waffles) or buy a boxed pancake mix and just add the spices!Some tips: You can use oil in place of butter, Add vanilla or any other extract you enjoy, Toppings are welcome (whipped cream, caramel sauce, pralines… or for a healthier touch, add fresh fruit).
Ingredients
3c Belgian Waffle Mix (like Krusteaz)
2large eggs
⅓ cup melted butter
⅔ c canned pumpkin
1 ½tsp cinnamon
¼-½tsp ginger
¼ tsp nutmeg
2tbsp light brown sugar
Instructions
Put all your ingredients in a large mixing bowl.
Blend well until everything is incorporated.
Heat up the waffle iron, and pour out ¼ cup helping in each section.
Cook to the desired doneness.
Top as desired .
