In Spain, you will often see cafes in the morning with various prepared bocadillos, or sandwiches, to enjoy with your morning coffee. One classic combination is lomo and queso, where the meat is from the loin of the pig. It’s a very simple sandwich, which people often enjoy without any added condiments. I’ve added a small bit of mayonnaise to the version below.The following recipe makes 1 sandwich.
Ingredients
½Tbspbutter(softened)
1bread bun(or any sandwich bread of choice)
3slicescooked lomo
2slicesEdam cheese
1Tbspmayonnaise
Instructions
Preheat your oven to 400˚F.
Add the softened butter to a sauté pan, and increase the heat to medium-high.
Griddle the insides of the sandwich bread until they are golden brown.
Add the lomo and cheese, and heat in the oven for an additional 4 minutes, or until the cheese is melted and the cooked lomo is warmed through.
Add some mayonnaise when assembling the sandwich, and serve hot.
Notes
These are best eaten when they are hot, right out of the oven.
