Both my parents worked when I was growing up, and my mother still manages to include hearty serving of vegetables and a simple fresh salad with most of our weekday meals.
One of the staple vegetables was a simple dish consisting of boiled peeled carrots, finished with a honey butter glaze.
They are simple, sweet, buttery, and incredible.
Honey Butter Glazed Carrots
Ingredients
- 5 carrots, peeled & cut into large pieces
- 2 tsp salt
- 3 Tbsp butter
- 2 Tbsp honey
- Kosher salt & freshly-ground black pepper, to taste
Instructions
- Boil carrots in water with 2 tsp kosher salt.
- Cook until the carrots are completely tender.
- Drain the water and return carrots to pot.
- Add the butter and honey, and stir to coat.
- Season with kosher salt and freshly-ground black pepper to taste.
