Watermelon is one of the fruits that come to mind when we think of summer, particularly picnics. This salad is sweet, cool, salty, and fresh. Better still, it’s incredibly easy to prepare. If you have leftover melon,cut it into slices, place it on a stick, and freeze it for just a few minutes. Take it to go!
To pick the perfect watermelon for this recipe look for one that’s symmetrical. When you pick it up, the melon should feel heavy for its size. Use your ears. Knock on it and listen for a deep resonating sound. Finally, use your eyes. The melon should have a large, yellow field spot.

Watermelon Feta Salad
Ingredients
DRESSING
- 2 tbsp honey
- 2 tbsp fresh lime (or lemon juice)
- 1 tbsp sangria
- 1 tbsp champagne or strawberry vinegar
- 1 ½ tbsp Extra Virgin Olive Oil
- Pinch of salt
SALAD
- 5 cups seedless watermelon balls
- 2 cups cubed cucumber
- 1/2 small red or white onion minced
- ¼ cup basil chiffonade
- ¼ cup mint chiffonade
- ⅔ cup feta cheese (crumbled.)
Instructions
- Whisk together all the ingredients for the dressing.
- Set it in the refrigerator while you prepare the rest of the salad.
- Use a large salad bowl to turn the watermelon, herbs, onion, and ½ of the feta cheese so they are evenly distributed.
- Pour the dressing over the top and gently toss
- Top with the rest of the feta
Notes
Feta: Block feta is a little cheaper, and you can crumble it easily. The brine keeps it fresh.
Herbs: Keep the mint and basil in balance. Use fresh.
Honey: Don’t skimp on a quality honey like orange flower, blackberry, or wildflower.
Oil: Extra virgin is the way to go, like Viola, Delicato, and Grignano. Alternatively use a Balsamic finishing sauce.
Onions: Shallots work, but red onion gives you more color Potential Additions: Avocado, Jalapeno rings, tiny tomatoes, baby spinach, parsley, strawberries, and olives.
