Poppy Seed and Coconut Waffles

While there are several amazing styles of waffles to explore at home, I prefer
yeasted waffles, such as Belgian waffles. I find the yeasted style of waffles to be
lighter and more enjoyable to eat compared to other, denser waffles. The added
poppy seeds here provide a delightful tiny crunch to the finished product.

The batter for these waffles takes some time to prepare, as it needs time to rise
before being mixed with the egg whites. If you know someone in your life who

The following recipe makes about 6-8 waffles, depending on the size of your
waffle iron.

Ingredients

  • 1 egg yolk
  • 1.5 Tbsp brown sugar
  • 3 Tbsp melted butter
  • 1 Tbsp melted coconut oil
  • ½ tsp vanilla extract
  • ¼ tsp ground cinnamon
  • ¼ tsp ground ginger
  • A tiny pinch (a few grains Kosher salt)
  • 2 Tbsp Greek yogurt
  • ¼ cup whole milk
  • 1.5 Tbsp poppy seeds
  • 1.5 Tbsp ground coconut
  • ½ tsp baking powder
  • 1 tsp 4 grams active dry yeast (about ½ of a packet)
  • 1.25 cups all-purpose flour
  • 1 egg white
  • 1 tsp white granulated sugar
  • 3 Tbsp butter (softened, for serving)
  • ½ cup maple syrup (for serving)
  • 2 cups fresh whipped cream (for serving)
  • 1 cup fresh blueberries (for serving)
  • 1 cup fresh strawberries (for serving)
  • 2 Tbsp confectioner’s (powdered sugar, for serving)

Instructions 

  • In a medium-sized mixing bowl, combine the egg yolk with your brown sugar, melted butter and coconut oil, vanilla extract, ground cinnamon, ground ginger, a small pinch of Kosher salt, some Greek yogurt, whole milk, poppy seeds, and ground coconut.
  • Mix until the ingredients are completely combined.
  • Add the baking powder, active dry yeast, and all-purpose flour, and stir until the batter reaches a smooth consistency.
  • Cover the mixing bowl with plastic wrap, and allow the batter to rise in the bowl for roughly 45-60 minutes.
  • When the batter has almost doubled in size, whisk an egg white with one teaspoon of white granulated sugar until the egg white reaches a stiff peak consistency.
  • Fold the whisked egg white into the waffle batter that you prepared earlier, and mix using a rubber spatula until the batter is smooth again.
  • *Note this mixing process will release some of the built-up air pockets in the batter, which is completely normal.
  • Preheat your waffle iron, and prepare your waffle toppings.
  • When the waffle iron is hot, add a scoop of batter and allow the waffle to cook until completely golden-brown, or about five minutes.
  • When your waffles are ready, serve with softened butter, maple syrup, fresh whipped cream, fresh blueberries, fresh strawberries, and a fine sprinkle of confectioner’s sugar.

Notes

You can prepare the waffles in advance of serving, and reheat them wrapped in aluminum foil in the oven before serving.
If you prepare the batter too many hours in advance of cooking the waffles, the yeast will lose some of its leavening strength. It is best to cook the waffles when the batter is still rising.
