
Balsamic Chicken with Almonds and Red Grapes
Ingredients
- One quarter cup olive oil
- 6 - 8 boneless chicken breasts
- Salt and pepper to taste
- 1 cup chicken broth
- 1 and one half cups red seedless grapes
- One quarter cup balsamic vinegar
- 2 Tbsp. brown sugar
- One half cup slivered almonds
Instructions
- Heat oil in a large skillet
- Sprinkle chicken with salt and pepper and saute on each side until brown
- Remove chicken from pan and set aside
- Add chicken broth, grapes, vinegar, brown sugar and almonds to pan and cook over low heat for about 10 minutes
- Return chicken to skillet and cook for 5 - 10 more minutes or until chicken is fully cooked
