These English muffin breakfast pizzas come together quickly, thanks to the help of some storebought English muffins and tomato sauce from the jar.
The recipe below makes 12 English muffin pizzas.

English Muffin Breakfast Pizzas with Sausage & Caramelized Onions
Ingredients
- 6 English muffins (cut in half to create 12 English muffin halves)
- 8 Tbsp (1 stick) salted butter, softened
- 2 white onions, cut into 1/8” slices
- 1.5 Tbsp salted butter, cold, cut into small cubes
- 6 whole eggs
- ¼ tsp corn starch
- 1 Tbsp crème fraiche
- Kosher salt & freshly-ground black pepper (to taste)
- 1 Tbsp vegetable oil
- 6 breakfast sausage links
- 1-2 jars of your favorite pasta or pizza sauce
- 1.5 cups shredded mozzarella cheese
- ½ cup shredded parmesan cheese
- ¼ cup fresh chives, finely sliced, as garnish
- Tabasco sauce, or your favorite hot sauce (as garnish)
Instructions
- Cut the English muffins in half to create 12 English muffin halves.
- Butter the inside of each English muffin half with ½ Tbsp of butter.
- Set the buttered English muffin halves aside for later, on a piece of parchment paper on a sheet tray, covered with a piece of plastic wrap.
- Set oven to 400F.
- Add the remaining 2 Tbsp of butter to a saute pan and caramelize the sliced white onions, cooking them over medium-low to medium heat until they are golden brown.
- *The caramelization process can take about 25 minutes.
- When the onions are caramelized, set them aside for later.
- Add the 1.5 Tbsp salted cold butter cubes to the 6 whole eggs and ¼ tsp corn starch and whisk to fully combine.
- Add 1 Tbsp butter to a nonstick saute pan, and turn heat to medium.
- When the butter has melted, add the whisked egg mixture.
- When the eggs begin to cook, gently stir them with a rubber spatula every minute or two.
- When the eggs are almost fully cooked, stir in 1 Tbsp of crème fraiche and continue to cook for an additional 20 seconds.
- When the eggs are cooked but still soft, remove them from the heat and season with kosher salt & freshly-ground black pepper.
- Saute the breakfast sausage links over medium heat in 1 Tbsp vegetable oil until they are golden brown.
- Cut the sausages into small pieces and set aside for later.
- Spread a spoonful of pizza sauce on each English muffin half.
- Add some shredded mozzarella cheese and shredded parmesan cheese to each pizza, topped with some of the cooked breakfast sausage and caramelized onions.
- Bake the pizzas in the oven at 400F, until the cheese has fully melted and is bubbly and the English muffins are nicely toasted.
- Remove the breakfast pizzas from the oven, and top each mini pizza with some of the soft-scrambled eggs.
- Garnish with the finely-sliced chives.
- Serve hot, with a dash or two of your favorite hot sauce.
