In Greek, Ambrosia literally means immortality. This particular treat was food suitable for only Gods and Goddesses. It is easy to see why. Ambrosia is delectably sweet without being overly heavy.
Many people have their own take on Ambrosia. There are no hard and fast rules about the ingredients, so play around and find your own divine delight!
Ambrosia
Ingredients
- 4 c fresh pineapple nibs
- 2 c mandarin orange segments (drained)
- 2 c shredded coconut
- 1 c rainbow-colored mini marshmallows
- 1 c sour cream
- 1 c whipped cream or whipped topping
- 1/2 c maraschino cherries (drained and halved (optional))
- 1/2 c chopped nuts
Instructions
- Combine the pineapple chunks, mandarin orange segments, shredded coconut, mini marshmallows, and optional cherries and nuts in a large mixing bowl.
- Gently fold in the sour cream and whipped cream or whipped topping until all the ingredients are well coated.
- Cover the bowl with plastic wrap.
- Refrigerate for at least 2 hours, or overnight, to allow the flavors to meld and the ambrosia to chill.
- Before serving, give the ambrosia a gentle stir to make sure all the ingredients are evenly distributed.
- Serve chilled in individual dessert dishes or as a side dish.
- Optionally, you can garnish each serving with a fresh cherry or sprinkle some additional shredded coconut on top for added visual appeal.
