Warmed Feta cheese is on a different level. When mixed with creamy, richly-caramelized onions, these crostini bites are delicious.
Note that olive oil is used a few times throughout the cooking process.
The ingredients can be prepped in advance of serving, and it takes just ten minutes to heat up!
Ingredients
- 5 white onions (cut into uniform 1/8” sections)
- 2 Tbsp butter (for cooking the onions)
- 2 Tbsp olive oil (for cooking the onions)
- 1 tsp Kosher salt
- 1 loaf of French bread (cut into bite-sized crostini)
- 2 Tbsp olive oil (for drizzling on the bread)
- 1.5 cups feta cheese (crumbled)
- 2 Tbsp fresh chives (very finely-sliced)
- 4 fresh mint leaves (very finely-sliced)
- Freshly-ground black pepper (for serving)
- A drizzle of olive oil (for serving)
Instructions
- Cut the white onions into uniform slices.
- In a large sauté pan, add the butter and olive oil, and increase the heat to medium-high.
- Add the sliced onions and salt, and cook while stirring for roughly twenty or thirty minutes, or until the onions are golden-brown in color.
- *It takes a while to properly caramelize onions.
- When the onions are ready, set them aside.
- Preheat your oven to 425˚F.
- Cut your French bread into quarter-inch slices, and arrange them on parchment paper on a sheet tray.
- Drizzle the slices in olive oil, and bake for roughly five minutes, or until the slices are warmed through.
- Remove the partially-cooked crostini from the oven, and top the slices with the crumbled Feta cheese and caramelized onions from earlier.
- Return to the oven to crisp-up for another five minutes.
- Remove the crostini from the oven, and drizzle with some olive oil, in addition to finely-sliced chives and fresh mint.
- Crack some freshly-ground black pepper on top prior to serving.
