Warmed Feta cheese is on a different level. When mixed with creamy, richly-caramelized onions, these crostini bites are delicious. Note that olive oil is used a few times throughout the cooking process.The ingredients can be prepped in advance of serving, and it takes just ten minutes to heat up!
Ingredients
5white onions(cut into uniform 1/8” sections)
2Tbspbutter(for cooking the onions)
2Tbspolive oil(for cooking the onions)
1tspKosher salt
1loaf of French bread(cut into bite-sized crostini)
2Tbspolive oil(for drizzling on the bread)
1.5cupsfeta cheese(crumbled)
2Tbspfresh chives(very finely-sliced)
4fresh mint leaves(very finely-sliced)
Freshly-ground black pepper(for serving)
A drizzle of olive oil(for serving)
Instructions
Cut the white onions into uniform slices.
In a large sauté pan, add the butter and olive oil, and increase the heat to medium-high.
Add the sliced onions and salt, and cook while stirring for roughly twenty or thirty minutes, or until the onions are golden-brown in color.
*It takes a while to properly caramelize onions.
When the onions are ready, set them aside.
Preheat your oven to 425˚F.
Cut your French bread into quarter-inch slices, and arrange them on parchment paper on a sheet tray.
Drizzle the slices in olive oil, and bake for roughly five minutes, or until the slices are warmed through.
Remove the partially-cooked crostini from the oven, and top the slices with the crumbled Feta cheese and caramelized onions from earlier.
Return to the oven to crisp-up for another five minutes.
Remove the crostini from the oven, and drizzle with some olive oil, in addition to finely-sliced chives and fresh mint.
Crack some freshly-ground black pepper on top prior to serving.
Notes
The caramelized onions can be made in advance, where you can assemble the ingredients and bake when ready to serve. Garnish at the end with the suggested ingredients, or add whatever you’d like!
