You’ve been invited to another party. While socialization is wonderful, coming up with new ideas for a dish to bring can be difficult. You can surprise everyone with these Topical Chicken Bites. They’re a perfect finger food. And, if you want them as a meal, just serve them with rice and a little pineapple salsa.
Tip: You can substitute ground pork or turkey for the chicken. In this case, you may want to switch up spicing, like using sage in the mix for turkey bites.

Tropical Chicken Party Bites
Ingredients
- 2 lbs ground chicken
- 1 c Italian bread crumbs
- ½ c crushed pineapple (fresh is best)
- ½ c green pepper finely chopped
- ½ c white or red onion (finely chopped)
- 1 ½ tsp fresh minced garlic
- 1 tsp salt
- ½ tsp freshly ground pepper
- 3 tbsp vegetable oil
Instructions
- Mix all the ingredients but the oil together thoroughly
- Shape them into coins about 2” wide by ½” thick
- Heat the oil in a deep frying pan to 350F (the sides help prevent splashing)
- Fry the coins for 4 minutes on each side. The safe cooking temperature for chicken is 165F
- Serve as they are or offer dipping sauces like sesame soy, sweet ‘n sour mango, apricot chili, or orange ginger
