Mix all the ingredients but the oil together thoroughly
Shape them into coins about 2” wide by ½” thick
Heat the oil in a deep frying pan to 350F (the sides help prevent splashing)
Fry the coins for 4 minutes on each side. The safe cooking temperature for chicken is 165F
Serve as they are or offer dipping sauces like sesame soy, sweet ‘n sour mango, apricot chili, or orange ginger
