Baked Oatmeal with Apples, Cranberries, and Walnuts

I bought a bunch of rolled oats recently, and have been baking cookies, making granola, and even going back to the frequent oatmeal-eating days of my childhood.

This overly-luxurious baked oatmeal recipe is filled with apples, cranberries, and walnuts. I like my oatmeal on the sweeter side, which is reflected in the ingredients below. You can scale up or down the sweetness according to your personal preferences.

The recipe below can be scaled up according to your desired quantity.

Baked Oatmeal with Apples, Cranberries, and Walnuts

I bought a bunch of rolled oats recently, and have been baking cookies, making granola, and even going back to the frequent oatmeal-eating days of my childhood.
This overly-luxurious baked oatmeal recipe is filled with apples, cranberries, and walnuts. I like my oatmeal on the sweeter side, which is reflected in the ingredients below. You can scale up or down the sweetness according to your personal preferences.
The recipe below can be scaled up according to your desired quantity.

Ingredients

  • 2 cups whole milk, brought to a simmer
  • 1 cup rolled oats
  • 1 tsp baking powder
  • 1.5 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp kosher salt
  • 2 Tbsp coconut oil, melted
  • ¼ cup maple syrup, plus more for serving
  • 1 whole egg, lightly beaten
  • 2 tsp vanilla extract
  • 1 large apple, peeled and diced
  • ¼ cup dried cranberries
  • ½ cup chopped walnuts
  • 3 Tbsp salted butter, melted
  • 3 Tbsp brown sugar
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground ginger

Instructions 

  • Preheat oven to 330F.
  • Grease a 9x13 inch baking dish with butter and set aside.
  • Bring the whole milk to a simmer on the stove and remove from heat.
  • In a medium-sized mixing bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, and kosher salt.
  • In a separate bowl, whisk together the melted coconut oil, maple syrup, egg, and vanilla extract.
  • Slowly whisk in the warm whole milk.
  • Combine the wet ingredients with the dry ingredients, and mix until everything is combined.
  • Pour the oatmeal mixture into the prepared baking dish and spread it out evenly.
  • In another bowl, mix together the chopped apples, dried cranberries, and walnuts.
  • Sprinkle the apple, cranberry, and nut mixture over the oatmeal.
  • In a small bowl, mix together the melted butter, brown sugar, cinnamon, nutmeg, and ginger.
  • Drizzle the butter and sugar spice mixture over the oatmeal, apples, cranberries, and nuts.
  • Bake at 330F for 30-35 minutes, or until the oats are cooked through and the top is lightly golden.
  • Remove from the oven and serve warm, with a heavy drizzle of maple syrup and some extra brown sugar.

Notes

Oatmeal is best eaten when it is warm. Add any fresh berries or sliced fruits of your choosing on top. Some sliced bananas would be nice here.
