This chia seed pudding is packed with protein, healthy fats, antioxidants, and gut-
friendly microbes. It’s really easy to prepare the night before you want to eat it,
where you simply allow the ingredients to sit together in the fridge overnight.

Blueberry Chia Seed Pudding with Toasted Walnuts and Honey
Ingredients
- 8 walnuts (lightly toasted and chopped)
- ¼ cup fresh blueberries
- ½ cup whole milk (or plant-based milk)
- ¼ cup Greek yogurt
- 3 Tbsp chia seeds
- 2 tsp honey (as garnish)
Instructions
- Lightly toast the walnuts, and roughly chop them.
- Mix together the fresh blueberries, whole milk, Greek yogurt, chia seeds, and
- chopped walnuts together in a medium-sized breakfast bowl.
- Cover the bowl with plastic wrap, and allow the contents to sit covered in the
- fridge for four hours or overnight.
- When ready to serve, remove the plastic wrap and mix the contents well with a
- spoon.
- Drizzle with some honey, and enjoy.
