Blueberry Chia Seed Pudding with Toasted Walnuts and Honey
This chia seed pudding is packed with protein, healthy fats, antioxidants, and gut-friendly microbes. It’s really easy to prepare the night before you want to eat it,where you simply allow the ingredients to sit together in the fridge overnight.The following recipe provides 1 serving.
Ingredients
8walnuts(lightly toasted and chopped)
¼cupfresh blueberries
½cupwhole milk(or plant-based milk)
¼cupGreek yogurt
3Tbspchia seeds
2tsphoney(as garnish)
Instructions
Lightly toast the walnuts, and roughly chop them.
Mix together the fresh blueberries, whole milk, Greek yogurt, chia seeds, and
chopped walnuts together in a medium-sized breakfast bowl.
Cover the bowl with plastic wrap, and allow the contents to sit covered in the
fridge for four hours or overnight.
When ready to serve, remove the plastic wrap and mix the contents well with a
spoon.
Drizzle with some honey, and enjoy.
Notes
You can use any fresh fruits and/or nuts for this recipe. Bananas would be great here.
