There are days you’d like a sweet treat but don’t really want to fuss. Guess what? You can make banana bread/cake using a box mix and NO milk. This recipe uses the extra bananas for moisture. And, truth be told, the bread benefits from the extra banana boost.
If you wish, you can also add a package of instant vanilla or banana pudding mix to the blend. It MUST be instant. This addition contributes to moisture as well.
Along with the bananas, you can stir in yummy additions like butterscotch morsels, toffee bits, coconut, dried fruit, nuts, and chocolate chips.
No milk banana bread
Ingredients
- 1 box cake or bread mix (any flavor you wish (even banana!))
- 3 large (ripe bananas)
- ⅓ c vegetable oil
- 2 large eggs
- Vegetable oil
- 2 large eggs
Instructions
- Set your oven to 350F
- Cover a 9x5 pan with parchment paper
- Mash your bananas until they’re pulpy
- Pour cake mix into a good-sized bowl.
- Add the bananas, oil, and eggs until mixed evenly
- Fold in any additions at this point
- Pour into the prepared pan
- Bake for 45 minutes (checking at the 35 minute mark in case your oven runs hot.
- The cake is done when a toothpick is mostly dry after placing it in the center of the bread (you might have a few small pieces clinging).
