I had a friend I used to bartend with in Washington D.C. who would often end his shift on a hot summer night with what he described as a “white wine spritzer”. His version was just soda water from the soda gun splashed into a half-glass of cheap pinot grigio. It seemed funny to me at the time—yet now I completely get it. This Sweet Vermouth Spritz is an homage to Brian.
The following recipe makes one cocktail. Enjoy.

Sweet Vermouth Spritz
Ingredients
- 3 oz sparkling wine (like Prosecco, chilled)
- 2 oz sweet vermouth (chilled)
- 1 oz soda water (chilled)
- Twist of lemon (as garnish)
Instructions
- Combine the chilled Prosecco, sweet vermouth, and soda water in a chilled glass.
- Serve with a twist of lemon.
