
Fiesta Bread Pudding
Ingredients
- 1 and one quarter cups water
- 1 and one third cups water
- 3 cinnamon sticks
- 5 cups French bread, (cubed)
- One quarter cup sliced almonds
- One third cup raisins
- One quarter cup butter
- One half cup Monterey Jack cheese
Instructions
- Combine water, brown sugar and cinnamon sticks in a saucepan and simmer for 15 minutes
- Remove cinnamon sticks and discard
- Combine bread, almonds, raisins and butter and mix well
- Pour sugar mixture over bread mixture and mix
- Spray an 8-inch baking pan with cooking spray and place mixture in pan
- Chill for 1 hour and remove
- Top with Monterey Jack cheese, cover with foil and bake for 25 minutes at 350 degrees
- Remove foil and bake an additional 10 minutes
- Serve warm
