You may never have considered your grill as a heat source for baking, but it can be! When you cook items on the grill, they acquire a subtle smoky taste that mixes with their flavor profile in luscious ways. This recipe leans into that idea with an Apple Galette.
What is a Galette?
An apple galette is a bit like a pie, but not quite as fancy. Galettes have a rustic appeal. You don’t use a pie dish for its shape. Rather you free-form them. Galette dough and pie dough are, however, the same. You can certainly make your own dough, but if you can find pre-made dough it saves a lot of time.
Smoky Apple Galette
Ingredients
GALETTE
- 1 9 ” pre-made pie crust
- 4 Honeycrisp apples
- 1 lemon juiced
- 3 tbsp light brown sugar
- ½ tsp nutmeg
- ½ tsp cinnamon
- ¼ tsp ginger
- ¼ cup finely chopped walnuts
- 2 tbsp Hawaiian (Turbinado sugar)
- 1 large egg
- 1 tsp water
GALETTE TOPPING
- This is an optional addition (but it’s really tasty)
- 2 tablespoons unsalted butter
- ½ c maple syrup
- ¼ c brown sugar
- ⅓ c powdered sugar
- 2 teaspoons vanilla
- Salt (1 pinch)
Instructions
GALETTE
- Set the two side burners of your grill to medium (375F), leaving the center one off.
- Place the pie crust on a piece of parchment paper
- Slice the apples thinly and put them in a bowl
- Toss them with the lemon, brown sugar, walnuts and spices
- Carefully lay the apples down 1 ½ inches away from the border so they create a spiral.
- Fold the dough over the top of the apples. You can use the parchment to keep your hands from sticking.
- Whisk water and egg together
- Brush it evenly over the dough
- Sprinkle the top with Hawaiian sugar
- Place the parchment on a tray and put it in the grill
- Cover
- Grill for 40 minutes - 1 hr until the crisp is golden brown.
GALETTE TOPPING
- Place the butter in a saucepan
- Melt it and let it cook until brown (be careful not to burn)
- Add all other ingredients
- Stir regularly until it reduces to the thickness you prefer
- Top the galette with the sauce, and perhaps add whipped cream for whimsy.
