
Cheesy Corn and Shrimp Chowder
Ingredients
- 2 Tbsp. butter
- 1 onion, (chopped)
- One half cup celery, (chopped)
- 2 carrots, (peeled and chopped)
- 1 tsp. dry mustard
- 2 cups chicken broth
- 1 tsp. thyme
- 1 16-oz. frozen package sweet corn
- 1 cup Half-and-Half or light cream
- 1 and one half pounds medium shrimp, shelled, deveined and cut into bite sized pieces
- 1 cup Fontina cheese, (grated)
Instructions
- Melt butter in a saucepan and saute onion, celery and carrots for about 10 minutes, add dry mustard, broth and thyme, and simmer for 10 minutes
- Add corn, Half-and-Half and shrimp and simmer for 10 minutes until shrimp turns pink
- Add cheese and stir until melted and serve
