When you want a budget-friendly meal, cheese, chicken, and broccoli hit the mark. It’s also homey, tasty, and requires little in the way of preparation.
Some ideas before we begin. Like most casseroles of this nature, you can change things up a lot. Here are some ideas:
Chicken: turkey, pork, ham, sausage
Cheese: Colby, Gouda, Havarti, Mozzarella, Munster, Provolone, Swiss
Stuffing mix: Herb & sage, Turkey, Classic, Cornbread
Broccoli: Asparagus, Cauliflower, Green beans, Snap peas, Spinach
Cream soup: Asparagus, Chicken, French onion, Mushrooms, Onion (regular), Wild rice (gives it more body)
Add-ins: Chopped celery, minced onion, garlic powder, onion powder, pepper, smoky paprika, and celery seed.
Chicken broccoli cheese
Ingredients
- 2 c Cooked chicken (cubed)
- 1 c Broccoli florets steamed
- 6 oz Chicken stuffing mix
- 10.5 oz 1 can condensed broccoli cheese soup
- 1 c sour cream
- 1 c shredded cheddar (generous heap)
- 2 c wild rice (cooked)
Instructions
- Preheat oven to 325F
- Line a baking dish with parchment paper
- Spread the rice evenly over the surface of the dish
- Mix the chicken, broccoli, sour cream, and soup together
- Pour it into your baking dish and smooth it evenly over the top if the rice.
- Follow the instructions for the stuffing, reducing the water to 1 ½ cups.
- When it’s done, mix in the cheddar cheese until fully integrated
- Bake for 20 minutes, covered
- Bake another 20 minutes or until the internal temperature reaches 165F
