Chicken Chopped Sub

Chopped subs have become a fad. They look messy, gooey, and colorful. And while they lack on the presentation side, chopped subs make up for it with flavor.

Think of the filling as all your sub favorites but “deconstructed.” The chopping and mixing end up giving you the flavors of everything all in one bite. Talk about satisfying.

The marinade in this recipe is just the standard oil sub-shops use when you ask for oil. Now you can make it yourself.

Chicken Chopped Sub

Ingredients

  • Chicken Strips - 1/2 pound per person

Marinade

  • 1 cup Extra Virgin Olive Oil **
  • ¼ cup Red wine vinegar
  • 2 tsp Italian seasoning
  • 2 tsp minced garlic
  • ½ tsp smoked paprika
  • ½ tsp sea salt
  • ¼ tsp freshly ground back pepper
  • ½ tsp sugar
  • 1 tsp soy sauce

Sub Filling

  • 2 cups Lettuce
  • 1 Firm Tomato
  • 1 Red Onion
  • 1 cup Parmesan or Asiago freshly grated
  • ¼ cup Barbecue Sauce (your choice)
  • ¼ cup Vinaigrette

Instructions 

  • Put all the marinade ingredients in a sealable bag
  • Add the chicken tenders
  • Let them marinade for at least 6 hours in the refrigerator
  • Drain and set aside
  • Set up a charcoal grill
  • Let it get red hot
  • Leave the chicken strips until they have grill marks (these cook quickly. Don’t overcook).
  • Remove the chicken from the heat
  • Cool a bit
  • Take the lettuce and chicken and chop them together thoroughly
  • Slice the onion and tomato, adding both to the chicken blend
  • Chop it again
  • Sprinkle with cheese, barbecue sauce and chop it again.
  • Toast your sub-buns.
  • It’s tempting to fill your buns to overflowing, but these get messy. Hold back just a little and have napkins on hand.
