Pleasing Pineapple Ribs

Beef and pork ribs are so adaptable. From hot and sweet to sticky and smoky, you can play with your ribs in so many ways. Go through the seasonings in this recipe and see if you want to change it up.

Ingredients

  • 8-10 ribs (dinner for two)
  • 2 tbsp Canola oil
  • 2 tbsp dark soy sauce
  • 2 cloves of garlic finely minced
  • 2 tbsp Ginger (fresh if possible, if not, use powder)
  • cup Smoky barbecue Sauce (your choice)
  • ½ cup Tahini
  • 2 cups Water (divided)
  • 3 ⅔ ” thick pineapple slices
  • 1 large Jalapeno pepper (halved)
  • 1 Bundle of Green onions
  • Sesame seeds

Instructions 

  • Loosen the silver skin from the ribs, then pull it off.
  • Cut the ribs into singles
  • Sear the ribs on all sides using a hot charcoal grill
  • Set aside and make a braising liquid
  • In a large pan, combine oil, soy, garlic, ginger, barbecue sauce, sesame, and one cup of water.
  • Put the ribs in the mixture and simmer for 1 hour.
  • Create a sauce out of pineapples and jalapeno peppers
  • Begin by charing the pineapple and peppers on both sides
  • Chop the pineapple into mouth-sized bites
  • Place them in a deep bowl with peppers, green onion, and one cup of water
  • Blend thoroughly using an immersion blender
  • Check the ribs and make sure the meat is “fall of the bone” tender
  • Put the ribs on a platter
  • Pour the sauce over the top of the ribs
  • Garnish with sesame seeds.
